Preparation
- Preheat the oven to 375°F (190°C).
- Thinly slice the sweet potatoes.
- In a skillet, brown the hot Italian sausage with garlic and onion until cooked through, then drain excess grease.
- In a bowl, mix ricotta cheese with salt, pepper, and chopped basil or parsley.
Assembly
- In a baking dish, layer thin slices of sweet potatoes, followed by a layer of the sausage mixture, a layer of marinara sauce, and a layer of the ricotta mixture.
- Repeat layers until ingredients are used up, ending with sweet potato slices on top.
Baking
- Cover the lasagna with foil and bake in the preheated oven for 50-60 minutes.
- Remove the foil, add burrata on top, and bake uncovered for an additional 10 minutes or until the top is bubbly and golden.
- Let the lasagna rest for 15-20 minutes before slicing.
Notes
For best flavor, assemble ahead of time and refrigerate until ready to bake. This dish can also be frozen before adding burrata. Sweet potatoes can hold moisture after freezing; let rest after reheating.
